Thai Chicken Pizza

First things first, my apologies for the terrible photo of this amazing little pizza, while your eyes may want to high five me, in the face. With a chair.  your taste buds will be apologizing. This Thai chicken pizza is ridiculously delicious and easy!



We used leftover chicken from the Chicken Burgers we made the night before from Gwyneth Paltrow's It's All Good cookbook. Of course, whatever sausage you like will be just fine or  some Mexican chorizo, yum!

We also used the recipe on the back of the yeast packet for our dough. Easy Peasy.

Once our dough was all squared away, (literally... we pressed our dough into a medium sized rimmed baking sheet.)

ladle your pizza sauce into the center of the dough, and spread it out towards the outside, leaving a 1/2 inch border all around. We used this recipe for our pizza sauce, but any good jarred sauce will do. Sprinkle with shredded mozzarella cheese, top with onions, bell peppers, olives what ever you'd like and of course, the (raw) Thai chicken mixture over the top. Pop into the oven for about an hour, or until the sides have browned and the cheese is runny and of course, the chicken is cooked through. Almost forgot! Turn the pan once halfway through at about the 30 minute mark to ensure your crust gets evenly browned. Take out of the oven, slice it up and enjoy!
