Peanut Butter Krispie Treats

Rice Krispie treats are the perfect thing to make if you don't have a lot of time or interest to get into a baking project but you really need (want?) something sweet. These are easy to make and basically fool proof. Note: This mixture is STICKY and will get on everything and anything if you let it.

Ingredients

3 Tablespoons unsalted butter
10 ounces large marshmallows ( 1 bag)
1/2 cup peanut butter (I used chunky)
Salt
6 cups Rice Krispies
1/2 cup chocolate chips or chocolate chunks

Directions

1. Over medium heat, in a medium sauce pan melt the butter. Add the peanut butter and stir in the marshmallows. Stir until it has all melted together and is smooth.
2. Meanwhile, grease ( I use butter but cooking spray works fine) a 9x13-inch pan.
3. Add the six cups of Rice Krispies to a large bowl, and gradually mix in the melted butter/peanut butter/marshmallow mixture. Fold it all in with a rubber spatula.
4. Press your mixture into the greased 9x13-inch pan. (I keep a little bowl with water that I use to keep my fingertips wet to prevent everything from sticking to me.) Let cool.
5. Melt the 1/2 cup of chocolate over a double broiler (bring water to a simmer in a small saucepan, with a heat-proof bowl over the top) melt the chocolate in that, stirring until smooth. Let this cool for a bit.
6. spoon the melted chocolate into a Ziploc bag, seal it. Cut a tiny bit off of one end of the bag, and use that to pipe your chocolate over the top of the treats. Let harden. Cut into squares. These treats can be kept in an airtight container for up to a week.
